Delicious crispy ground beef tacos filled with seasoned beef and melty cheese, perfect for family gatherings.


Ingredients

  • 1 pound lean ground beef (90%)
  • 1 packet taco seasoning
  • 3/4 cup red enchilada sauce
  • 2 1/2 cups Oaxaca cheese or a blend of Mexican cheese or Monterey Jack
  • 10 corn tortillas
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 450°F.
  2. Heat a skillet over medium-high heat; add ground beef and break it into smaller pieces.
  3. Brown the beef evenly and add the taco seasoning and red enchilada sauce; stir and simmer for a few minutes.
  4. Wrap tortillas in a damp paper towel and microwave for 30-60 seconds until pliable.
  5. Brush one side of each tortilla with olive oil, then place on a baking sheet, oiled side down.
  6. On half of each tortilla, sprinkle 2 tablespoons of cheese, followed by ¼ cup of beef mixture, and another 2 tablespoons of cheese. Fold the tortilla over the filling.
  7. Repeat for remaining tortillas and lay them in a single layer on the baking sheet.
  8. Bake for 16 minutes until crispy and cheese is melted.
  9. Cool for 3 minutes before serving.
