  • 2 cups all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 large eggs
  • 1/4 cup milk
  • 2 cups panko breadcrumbs
  • Vegetable oil for frying
  • 1/2 cup honey
  • 2 tablespoons hot sauce
  • 1 tablespoon butter
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Pound chicken breasts to an even 1/2-inch thickness, then cut each breast in half to make 8 cutlets.
  2. Set up breading station: In one bowl, combine flour, salt, pepper, and garlic powder. In second bowl, whisk eggs and milk. Place panko breadcrumbs in a third bowl.
  3. Dredge each chicken piece in flour mixture, then egg wash, then coat with breadcrumbs. Let breaded chicken rest 5-10 minutes.
  4. Heat oil in a large skillet to 350-375°F. Fry chicken in batches for 3-4 minutes per side until golden brown and internal temperature reaches 165°F.
  5. While chicken cooks, make hot honey sauce by combining honey, hot sauce, and butter in a small saucepan. Warm over low heat until butter melts and mixture is well combined.
  6. Transfer cooked chicken to a wire rack or paper towel-lined plate to drain excess oil.
  7. Drizzle hot honey mixture over chicken, then sprinkle with crumbled feta cheese and chopped parsley. Serve immediately.
