A delightful crispy Korean potato dish featuring a savory blend of garlic, chili, and tangy lime flavors.

- 500 g small, waxy potatoes
- 1 teaspoon fine salt
- 1 tablespoon melted plant-based butter or vegetable oil
- ½ teaspoon powdered garlic
- 1 teaspoon Korean chili powder (gochugaru) or crushed red chili flakes
- 2 small shallots, finely chopped and peeled
- Juice from half a lime
- 8 tablespoons vegan mayonnaise
- 1–2 tablespoons Korean chili paste (gochujang)
- 2 teaspoons plant-based fish sauce substitute
- A handful of fresh cilantro leaves, roughly broken apart
- A small handful of fresh chives, finely sliced
- 1 teaspoon toasted black sesame seeds (optional)
Instructions
- Preheat the oven to 200°C (or air fryer to 180°C).
- Bring a pot of water to boil, rinse the potatoes, add salt, and simmer for about 10 minutes until tender.
- Drain the potatoes and transfer them to a mixing bowl.
- Add melted butter, powdered garlic, gochugaru, and more salt to the potatoes and toss to combine.
- Arrange the seasoned potatoes on a baking tray and gently smash them using a jar or glass to create surface area for crisping.
- Bake in the oven for around 20 minutes until golden and crispy, or air fry until reaching the same texture.
- Meanwhile, mix chopped shallots with lime juice in a small bowl; let sit for 5 minutes.
- Combine vegan mayonnaise, gochujang, and plant-based fish sauce into the shallot-lime mixture and whisk until smooth.
- Once potatoes are crispy, allow them to cool slightly, then transfer to a serving plate and drizzle with half the sauce.
- Garnish with chives and toasted sesame seeds (if using).
Notes
For extra crunch, toss potatoes halfway through cooking. Adjust spices according to personal taste.
