  • 4 tablespoon (60 ml) s potato starch
  • 2 eggs, lightly beaten
  • 3/4 teaspoon (4 ml) kosher salt
  • 1/4 teaspoon (1 ml) ground black pepper
  • 125 teaspoon (1 ml) garlic powder
  • 1 tablespoon (15 ml) chopped fresh chives
  • 1 tablespoon (15 ml) vegetable oil
  • Cooking spray

Instructions

  1. Collect all the necessary items.
  2. In a medium bowl, combine the mashed potatoes, potato starch, eggs, salt, pepper, garlic powder, and a teaspoon of the chives, mixing until the mixture is cohesive and sticky yet firm.
  3. Warm a tablespoon of oil in a 10-inch nonstick pan over medium-high heat until the oil is hot and aromatic. Place the potato blend into the pan, flattening it into a pancake roughly 9 inches wide.
  4. Lower the heat to medium; cover the pan with a lid or a flat baking sheet, rotating the pan 90 degrees every 2 to 3 minutes, until the edges are golden and the top is nearly dry, about 8 to 9 minutes.
  5. Transfer the potato pancake to a large plate. Lightly coat another large plate with cooking spray and flip the pancake onto the sprayed plate.
  6. Pour the remaining teaspoon of oil into the pan and warm over medium heat. Return the pancake to the pan and cook, without a cover, until the other side is golden brown, approximately 5 minutes.
  7. Move the pancake to a cutting board and sprinkle with the remaining teaspoon of chives.
  8. Cut the pancake into 8 pieces and serve immediately. Enjoy!
