Delightful crispy parmesan potatoes with a savory crust and tender interior, perfect as a cozy side dish.
Ingredients

- 4 small potatoes (russets or gold)
- 4 tbsp butter (melted)
- 1/3 cup parmesan cheese (grated)
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Wash and slice the potatoes in half.
- Using a sharp knife, carefully score the inside of the potato surface.
- In a baking dish, pour the melted butter, parmesan cheese, and seasonings into the bottom. Stir to combine and spread the paste evenly over the bottom of the baking dish.
- Add in the potato halves, with the inside of the potato facing down in the parmesan paste.
- Bake at 415°F for 25 minutes.
Notes
For extra crispiness, soak potato halves in cold water before baking and dry thoroughly. Broil for the last few minutes for a crunchier exterior.
