Delicious crispy pickle egg rolls filled with cream cheese, sharp cheddar, and crumbled bacon, perfect for dipping and sharing.

- 8 oz cream cheese (softened)
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon (crumbled)
- 1 tsp garlic powder
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 10 pieces egg roll wrappers
- 1 cup vegetable oil (for frying)
- 1 tbsp chopped chives (for garnish)
- 1/2 cup ranch dressing (for dipping)
Instructions
- In a large mixing bowl, combine the softened cream cheese, cheddar cheese, crumbled bacon, garlic powder, kosher salt, and black pepper. Mix until well blended.
- Lay an egg roll wrapper flat with one corner facing you, and spoon about 2 tablespoons of the cheese filling onto the center of the wrapper.
- Fold the corner closest to you over the filling, tuck it snugly, then fold in the sides and roll away from you to form a tight cylinder.
- Seal the edges of the wrapper with a small amount of water and repeat with the remaining wrappers and filling.
- Heat vegetable oil in a deep skillet over medium-high heat. Carefully place a few egg rolls in the hot oil without overcrowding.
- Fry the egg rolls for about 2-3 minutes on each side or until they turn golden brown. Remove them from the oil and drain on paper towels.
- Sprinkle with chopped chives for garnish and serve with ranch dressing for dipping.
Notes
For the crispiest egg rolls, avoid overcrowding the pan while frying, and serve immediately after frying for the best texture.
