Description
Traditional Polish potato fritters (placki ziemniaczane) that are crispy on the outside and tender inside, made with finely grated potatoes and aromatic herbs.
Ingredients

- 4–5 medium potatoes, peeled and finely grated
- 2 eggs, room temperature
- 1/3 cup all-purpose flour
- 1 medium onion, finely grated
- 2 cloves garlic, minced
- Salt and pepper to taste
- Vegetable oil for frying
- Fresh herbs (optional)
Instructions
- Grate potatoes and onion finely, drain excess liquid
- Mix in room temperature eggs for better binding
- Add flour, garlic, salt, and pepper to create the batter
- Heat oil in a cast iron pan or heavy-bottomed skillet
- Drop spoonfuls of batter into hot oil
- Fry until golden brown and crispy on both sides
- Drain on paper towels
- Serve immediately while hot
Notes
- Can be prepared up to 2 hours ahead, add extra tablespoon of flour if prepping ahead
- For gluten-free version, use 1:1 gluten-free flour blend or 2 tablespoons potato starch
