- 2 cups cold mashed potatoes
- 2 cups cooked, shredded chicken
- 2 eggs (1 for mixture, 1 for coating)
- 1 cup breadcrumbs (divided for mixture and coating)
- 1/2 cup grated cheese
- 1/4 cup finely chopped onions
- 2 cloves garlic, minced
- 1 teaspoon dried herbs (thyme, parsley)
- Salt and pepper to taste
- Oil for frying
Instructions
- Mix cold mashed potatoes, shredded chicken, 1 beaten egg, 1/2 cup breadcrumbs, cheese, onions, garlic, and seasonings.
- Chill mixture for 30 minutes.
- Form mixture into balls (about 2 inches in diameter).
- Beat remaining egg in a shallow bowl.
- Place remaining breadcrumbs in another bowl.
- Dip each ball in egg, then coat with breadcrumbs.
- Heat oil to 350°F.
- Fry balls until golden brown and heated through.
- Drain on paper towels before serving.
Notes
- Can be prepared up to 24 hours in advance.
- Use cold mashed potatoes for better binding.
- Can be frozen for up to 3 months after cooking.
- Reheat frozen balls in a 375°F oven for 15-20 minutes.
- Ensure proper binding with eggs and breadcrumbs to prevent falling apart.
