  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups crushed Ritz crackers
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place each chicken breast between two sheets of plastic wrap and pound to an even 1/2-inch thickness.
  3. Set up a breading station: place flour in one shallow dish, beaten eggs in a second dish, and crushed Ritz crackers mixed with Italian seasoning, garlic powder, salt, and pepper in a third dish.
  4. Dredge each chicken breast in flour, then dip in egg, and finally coat thoroughly with the seasoned cracker crumbs.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat. Add the breaded chicken and cook until golden brown, about 3-4 minutes per side.
  6. Pour marinara sauce around (not over) the chicken in the skillet, then sprinkle mozzarella and Parmesan cheese over each chicken breast.
  7. Transfer the skillet to the preheated oven and bake until the chicken is cooked through (165°F/74°C internal temperature) and the cheese is melted and bubbly, about 15-18 minutes.
  8. Garnish with fresh basil leaves before serving.

Notes

  • For extra flavor, you can add 1/4 cup of grated Parmesan cheese to the cracker mixture.
  • If you don’t have Ritz crackers, you can substitute with Italian breadcrumbs.
  • Serve with pasta or a side salad for a complete meal.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
