- 2 pounds Yukon Gold or Russet potatoes
- 4 tablespoons olive oil (or melted butter)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried rosemary (or any herb of your choice)

Instructions
- Preheat the oven to 425°F (220°C).
- Wash the potatoes thoroughly under cold water.
- Peel if desired, then chop into 1 to 2-inch uniform pieces.
- Soak the potatoes in cold water for about 30 minutes.
- Drain and rinse the potatoes, then pat them dry with a clean towel.
- In a large mixing bowl, combine the potatoes, olive oil or melted butter, garlic powder, onion powder, dried rosemary, salt, and black pepper. Toss to coat evenly.
- Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25 to 30 minutes, flipping halfway through, until golden brown and crispy.
- Once tender and crispy, remove from the oven and serve warm.
