Ingredients

  • 2 pounds Yukon Gold or Russet potatoes
  • 4 tablespoons olive oil (or melted butter)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried rosemary (or any herb of your choice)
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash the potatoes thoroughly under cold water.
  3. Peel if desired, then chop into 1 to 2-inch uniform pieces.
  4. Soak the potatoes in cold water for about 30 minutes.
  5. Drain and rinse the potatoes, then pat them dry with a clean towel.
  6. In a large mixing bowl, combine the potatoes, olive oil or melted butter, garlic powder, onion powder, dried rosemary, salt, and black pepper. Toss to coat evenly.
  7. Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper.
  8. Roast in the preheated oven for 25 to 30 minutes, flipping halfway through, until golden brown and crispy.
  9. Once tender and crispy, remove from the oven and serve warm.
