Ingredients

Instructions
- Prepare the filling by finely chopping the mixed vegetables and seasoning them with salt and pepper.
- Soak rice paper wrappers in warm water until pliable, about 10-15 seconds.
- Place a spoonful of the vegetable filling on the bottom third of the rice paper wrapper.
- Fold the sides over the filling and roll it up tightly.
- Heat oil in a pan over medium heat and fry the dumplings until golden and crispy, about 3-4 minutes on each side.
- Serve hot with soy sauce for dipping.
Notes
Ensure the oil is at the right temperature to avoid soggy dumplings. Keep dumplings warm in a low oven while you fry additional batches.
