  • Author: Anele
  • Total Time: 45 minutes
  • Yield: 12 doughnuts 1x

Description

Unique savory venison doughnuts with a delicious tangy glaze – a perfect game meat appetizer that’s sure to impress at your next gathering.

Ingredients

Scale
  • 1 pound ground venison (with 15-20% fat content)
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried herbs (rosemary, thyme)
  • Salt and pepper to taste
  • Oil for frying
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey
  • 1 teaspoon red pepper flakes

Instructions

  1. In a large bowl, combine ground venison, breadcrumbs, egg, garlic, Worcestershire sauce, herbs, salt and pepper. Mix thoroughly but don’t overwork.
  2. Form the mixture into 12 small patties, then shape each into a doughnut by pressing your thumb through the center and gently widening the hole.
  3. Chill the formed doughnuts for at least 30 minutes to help them hold their shape during cooking.
  4. Heat oil to 350°F in a deep fryer or heavy pot (or prepare air fryer if using that method).
  5. Cook doughnuts until golden brown and fully cooked through, about 3-4 minutes per side if frying, or 10-12 minutes in an air fryer at 375°F.
  6. While doughnuts cook, prepare the glaze by combining apple cider vinegar, honey and red pepper flakes in a small saucepan. Reduce until slightly thickened.
  7. Drain cooked doughnuts on paper towels, then brush with the tangy glaze before serving warm.

Notes

  • Ensure venison has enough fat content (15-20%) for the best texture, or consider adding a bit of pork fat if needed.
  • For a lighter option, you can air fry instead of deep frying.
  • These can be made ahead and reheated in a 350°F oven for 5-7 minutes.
  • The glaze can be adjusted to your taste preference – add more honey for sweetness or more pepper flakes for heat.
