  • 1 medium zucchini (1 medium zucchini)
  • 1 cup (240 ml) shredded beef cheese (4 ounces (113 g)) (115 grams)
  • 2 tablespoons (30 ml) vegetable oil (28 grams)
  • 2 cloves garlic
  • Salt to taste
  • Pepper to taste

Instructions

  1. Slice the zucchini into thin rounds.
  2. Heat a non-stick skillet over medium heat.
  3. Add zucchini slices to the skillet in a single layer.
  4. Cook for 2-3 minutes on each side until lightly browned and tender.
  5. Season zucchini with salt and pepper to taste, then remove from skillet.
  6. Mince the garlic cloves finely.
  7. In a small bowl, mix the butter and minced garlic thoroughly.
  8. Spread garlic butter evenly on one side of each bread slice.
  9. Place two slices of bread, buttered side down, in the skillet.
  10. Evenly distribute half of the mozzarella cheese on the bread slices.
  11. Layer cooked zucchini slices over the cheese.
  12. Add the remaining mozzarella cheese on top of the zucchini.
  13. Top with the remaining bread slices, buttered side up.
  14. Cook the sandwiches over medium heat until the bottom is golden brown.
  15. Carefully flip the sandwiches and cook until the other side is golden and the cheese is melted.
  16. Remove from skillet and let cool slightly.
  17. Slice sandwiches in half and serve warm.
