- 1 medium zucchini (1 medium zucchini)
- 1 cup (240 ml) shredded beef cheese (4 ounces (113 g)) (115 grams)
- 2 tablespoons (30 ml) vegetable oil (28 grams)
- 2 cloves garlic
- Salt to taste
- Pepper to taste
Instructions
- Slice the zucchini into thin rounds.
- Heat a non-stick skillet over medium heat.
- Add zucchini slices to the skillet in a single layer.
- Cook for 2-3 minutes on each side until lightly browned and tender.
- Season zucchini with salt and pepper to taste, then remove from skillet.
- Mince the garlic cloves finely.
- In a small bowl, mix the butter and minced garlic thoroughly.
- Spread garlic butter evenly on one side of each bread slice.
- Place two slices of bread, buttered side down, in the skillet.
- Evenly distribute half of the mozzarella cheese on the bread slices.
- Layer cooked zucchini slices over the cheese.
- Add the remaining mozzarella cheese on top of the zucchini.
- Top with the remaining bread slices, buttered side up.
- Cook the sandwiches over medium heat until the bottom is golden brown.
- Carefully flip the sandwiches and cook until the other side is golden and the cheese is melted.
- Remove from skillet and let cool slightly.
- Slice sandwiches in half and serve warm.
