Ingredients

- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 cups carrots, sliced
- 2 cups celery, sliced
- 1 onion, diced
- 2 cups egg noodles
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Place chicken breasts in the bottom of the crock pot.
- Add the chicken broth, carrots, celery, onion, garlic powder, thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, shred the chicken with two forks and return it to the pot.
- Stir in the egg noodles and cook until noodles are tender.
- Garnish with fresh parsley if desired and serve warm.
Notes
For a richer flavor, sauté onions, carrots, and celery in olive oil before adding to the crock pot. Store noodles separately from the broth when refrigerating leftovers.
