A comforting and nourishing chicken noodle soup that simmers effortlessly in a crock pot, perfect for sharing with loved ones.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 1 onion, diced
  • 2 cups egg noodles
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Place chicken breasts in the bottom of the crock pot.
  2. Add the chicken broth, carrots, celery, onion, garlic powder, thyme, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, shred the chicken with two forks and return it to the pot.
  5. Stir in the egg noodles and cook until noodles are tender.
  6. Garnish with fresh parsley if desired and serve warm.

Notes

For a richer flavor, sauté onions, carrots, and celery in olive oil before adding to the crock pot. Store noodles separately from the broth when refrigerating leftovers.
