Ingredients

  • 2 lb beef stew meat, chuck roast, or round steak
  • ½ cup flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Pinch of salt
  • ½ tsp black pepper
  • 4 tbsp butter, divided
  • 3 yellow onions, sliced
  • ¾ cup beef stock
  • 1 packet French onion soup mix
  • 1 bay leaf
  • ½ tsp dried rosemary
  • 4 oz cream cheese, cubed
  • ¼ cup sour cream
  • 1 (12 oz) bag egg noodles
  • French fried onions (optional for garnish)

Instructions

  1. In a zip-top bag, add the beef, flour, garlic powder, onion powder, salt, and pepper. Shake until the beef is well-coated.
  2. In a skillet, heat 2 tbsp of butter over medium-high heat. Once melted, add the coated beef and sear until browned. Transfer the beef to your Crock Pot.
  3. In the same skillet, add the remaining butter and sauté sliced onions for about 5 minutes until softened. Add to the Crock Pot, alongside the beef.
  4. Pour in the beef stock, French onion soup mix, bay leaf, and dried rosemary. Stir to combine, ensuring everything is well-mixed.
  5. Set the Crock Pot on low and let it cook for 8 hours.
  6. After 8 hours, stir in the cream cheese and sour cream until smooth.
  7. Cook the egg noodles separately according to package instructions.
  8. Serve the beef mixture over a bed of noodles and sprinkle with French fried onions if desired.
