- 2 lb beef stew meat, chuck roast, or round steak
- ½ cup flour
- 1 tsp garlic powder
- 1 tsp onion powder
- Pinch of salt
- ½ tsp black pepper
- 4 tbsp butter, divided
- 3 yellow onions, sliced
- ¾ cup beef stock
- 1 packet French onion soup mix
- 1 bay leaf
- ½ tsp dried rosemary
- 4 oz cream cheese, cubed
- ¼ cup sour cream
- 1 (12 oz) bag egg noodles
- French fried onions (optional for garnish)
Instructions
- In a zip-top bag, add the beef, flour, garlic powder, onion powder, salt, and pepper. Shake until the beef is well-coated.
- In a skillet, heat 2 tbsp of butter over medium-high heat. Once melted, add the coated beef and sear until browned. Transfer the beef to your Crock Pot.
- In the same skillet, add the remaining butter and sauté sliced onions for about 5 minutes until softened. Add to the Crock Pot, alongside the beef.
- Pour in the beef stock, French onion soup mix, bay leaf, and dried rosemary. Stir to combine, ensuring everything is well-mixed.
- Set the Crock Pot on low and let it cook for 8 hours.
- After 8 hours, stir in the cream cheese and sour cream until smooth.
- Cook the egg noodles separately according to package instructions.
- Serve the beef mixture over a bed of noodles and sprinkle with French fried onions if desired.
