Ingredients

  • 1 pound chicken thighs, diced
  • 1 pound andouille sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 2 cups uncooked rice
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a Crock Pot, combine the chicken, sausage, onion, bell pepper, celery, garlic, diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, salt, and pepper.
  2. Stir well to combine all ingredients.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours until the rice is cooked and liquid is absorbed.
  4. Fluff the rice and serve hot, garnished with green onions.

Notes

For enhanced flavor, consider searing the chicken thighs and sausage before adding them to the Crock Pot. Use low sodium chicken broth for better control over seasoning.
