Description

Ingredients

  • 3 pounds chuck chops or chuck roast
  • 2 tablespoons olive oil
  • 1 packet ranch seasoning mix
  • 1 packet au jus gravy mix
  • 1/2 cup butter (1 stick)
  • 810 pepperoncini peppers
  • 1/2 cup pepperoncini brine
  • 1 medium onion, sliced (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season beef with salt and pepper, then sear on all sides until well-browned.
  2. Place the seared meat in the slow cooker. If using onions, add them now.
  3. Sprinkle the ranch seasoning and au jus mix evenly over the meat.
  4. Add the stick of butter on top of the seasoned meat.
  5. Arrange pepperoncini peppers around the roast and pour in the pepperoncini brine.
  6. Cover and cook on low for 8 hours or on high for 4-5 hours, until the meat is fall-apart tender.
  7. Shred the meat with two forks and mix with the sauce before serving.

  • For a keto-friendly version, make sure your ranch and au jus seasonings are low-carb.
  • The pepperoncini peppers add a tangy flavor without much heat.
