Description

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 can tomato sauce
  • 1 can diced tomatoes
  • 1 can diced green chilies
  • 1 packet taco seasoning
  • 1 cup water

Instructions

  1. Brown the ground beef in a skillet over medium heat, then drain excess fat.
  2. Sauté chopped onions in the same skillet until translucent.
  3. Transfer the beef and onions to a crock pot.
  4. Add black beans, kidney beans, corn, tomato sauce, diced tomatoes, green chilies, and taco seasoning.
  5. Pour in 1 cup of water and stir to combine all ingredients.
  6. Cook on low for 6-8 hours or on high for 3-4 hours.
  7. Taste and adjust seasoning with salt and pepper before serving.

Notes

Serve with optional toppings like shredded cheese, sour cream, and fresh cilantro. Accompany with tortilla chips for added crunch.
