- 1 lb ground beef
- 1 medium onion, chopped
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 can tomato sauce
- 1 can diced tomatoes
- 1 can diced green chilies
- 1 packet taco seasoning
- 1 cup water
Instructions
- Brown the ground beef in a skillet over medium heat, then drain excess fat.
- Sauté chopped onions in the same skillet until translucent.
- Transfer the beef and onions to a crock pot.
- Add black beans, kidney beans, corn, tomato sauce, diced tomatoes, green chilies, and taco seasoning.
- Pour in 1 cup of water and stir to combine all ingredients.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Taste and adjust seasoning with salt and pepper before serving.
Notes
Serve with optional toppings like shredded cheese, sour cream, and fresh cilantro. Accompany with tortilla chips for added crunch.
