Instructions
- Cut chicken breasts into 2-inch pieces for even cooking. Allow cream cheese to reach room temperature.
- In a medium bowl, whisk together cream of chicken soup, Italian dressing mix, melted butter, chicken broth, and white wine (or substitute).
- Spray crockpot with non-stick cooking spray. Place chicken pieces in an even layer at the bottom of the crockpot. Season with salt and pepper, then sprinkle minced garlic, dried basil, and oregano over the chicken.
- Pour the prepared sauce mixture over the chicken, ensuring all pieces are evenly coated. Place cubed cream cheese on top without stirring.
- Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours until chicken reaches 165°F (74°C). About 30 minutes before serving, gently stir to incorporate the cream cheese into the sauce.
- Cook angel hair pasta according to package instructions, typically 4-5 minutes until al dente. Drain well.
- Serve the chicken and creamy sauce over the pasta, garnishing with fresh parsley.
Notes
- For a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the mixture during the last 30 minutes of cooking with the lid off.
- Reserve 1/4 cup pasta water before draining to add to the sauce for a silkier consistency if desired.
- Greek yogurt can substitute for cream cheese for a lighter option.
- Use rotisserie chicken pieces to reduce cooking time (add in final 30 minutes).
