Ingredients

- 1 lb stew meat (or 2 lbs for leftovers)
- 1 packet onion soup mix
- 1 packet brown gravy mix
- 1 can cream of mushroom soup
- 1 can beef broth
- 1 can mushrooms (or sautéed fresh)
- Egg noodles (or wide pasta of choice)
Instructions
- Load the crockpot: Add beef, onion soup mix, brown gravy mix, cream of mushroom soup, mushrooms, and beef broth. Stir to combine.
- Cook low & slow: Cover and cook on LOW for 7–8 hours (or HIGH for 4–5 hours). Do not peek!
- Test & skim: When the beef is fork-tender, skim any fat from the top.
- Boil noodles: Cook egg noodles just shy of done. Drain—do not rinse!
- Serve: Plate noodles, top with beef and gravy, and garnish with parsley or chives if desired.
Notes
For extra depth of flavor, consider searing the stew meat before adding to the crockpot. You can also add extra vegetables like carrots and peas for added nutrition.
