Description

A creamy and cheesy CrockPot Chicken Tortellini that brings warmth and comfort to the dinner table with minimal effort.


Ingredients

  • 1 ½ lbs chicken breast (approximately 4 medium breasts)
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion granules
  • 1 teaspoon Italian seasoning mix
  • ½ teaspoon paprika
  • ¼ teaspoon red chili flakes
  • 1 ½ cups chicken broth
  • 1 lb cheese tortellini
  • 1 cup shredded mozzarella cheese
  • ½ cup heavy cream
  • 2 cups baby spinach
  • ⅓ cup grated Parmesan cheese

Instructions

  1. Spray the interior of your slow cooker with olive oil.
  2. Place the chicken breasts in a single layer in the slow cooker.
  3. Sprinkle garlic powder, onion granules, Italian seasoning, paprika, and red chili flakes over the chicken.
  4. Pour the marinara sauce over the chicken.
  5. Cover and cook on LOW for 4 hours until the chicken is tender.
  6. Shred the chicken with two forks and mix it back into the sauce.
  7. Add the cheese tortellini, shredded mozzarella, and heavy cream to the pot.
  8. Stir well and cook on LOW for an additional 30 minutes.
  9. Add fresh baby spinach and cook for another 10 minutes until wilted.
  10. Stir in the grated Parmesan cheese and serve.

Notes

Feel free to experiment with different vegetables and spices to enhance flavor. Fresh herbs are recommended for best results.
