Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1/2 cup milk or chicken broth
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup chopped green onions, for garnish (optional)
  • Salt and pepper, to taste

Instructions

  1. Lightly grease your crockpot with cooking spray.
  2. Place the chicken breasts in the bottom of the crockpot in a single layer.
  3. In a medium bowl, beat the softened cream cheese with the dry ranch dressing mix until smooth, adding a tablespoon of milk if needed.
  4. Spread the cream cheese mixture evenly over the chicken breasts.
  5. Pour the milk or chicken broth over the cream cheese-covered chicken.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and easily shreddable.
  7. Shred the chicken in the crockpot with two forks.
  8. Stir in the shredded cheddar cheese and crumbled bacon until well combined and the cheese is melted.
  9. Cover for an additional 5-10 minutes until the cheese is bubbly.
  10. Sprinkle with chopped green onions, if desired.
  11. Serve hot on buns, over rice, in lettuce wraps, or as a dip.

Notes

Consider marinating the chicken in ranch dressing before cooking for added flavor. You can also use low-fat cream cheese for a healthier option.
