- 2 lbs boneless, skinless chicken breasts
- 1/2 cup milk or chicken broth
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1/4 cup chopped green onions, for garnish (optional)
- Salt and pepper, to taste
Instructions
- Lightly grease your crockpot with cooking spray.
- Place the chicken breasts in the bottom of the crockpot in a single layer.
- In a medium bowl, beat the softened cream cheese with the dry ranch dressing mix until smooth, adding a tablespoon of milk if needed.
- Spread the cream cheese mixture evenly over the chicken breasts.
- Pour the milk or chicken broth over the cream cheese-covered chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and easily shreddable.
- Shred the chicken in the crockpot with two forks.
- Stir in the shredded cheddar cheese and crumbled bacon until well combined and the cheese is melted.
- Cover for an additional 5-10 minutes until the cheese is bubbly.
- Sprinkle with chopped green onions, if desired.
- Serve hot on buns, over rice, in lettuce wraps, or as a dip.
Notes
Consider marinating the chicken in ranch dressing before cooking for added flavor. You can also use low-fat cream cheese for a healthier option.
