Ingredients

- 2–3 pounds beef roast
- 4 cups beef broth
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 6–8 toasted rolls
- 6–8 slices of provolone or Swiss cheese
- Au jus for dipping
Instructions
- Place the beef roast in the slow cooker.
- Add sliced onion, minced garlic, thyme, rosemary, salt, and pepper.
- Pour in the beef broth.
- Cover and cook on low for 8-10 hours or until the meat is tender.
- Remove the meat and shred it, then return it to the cooker to soak in the juices.
- To serve, place the beef on toasted rolls, top with cheese, and serve with warm au jus on the side for dipping.
Notes
Try browning the beef roast before slow cooking for added depth of flavor. Adjust au jus thickness by reducing the broth if desired.
