Ingredients

- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1 egg
- 1/4 cup grated Parmesan
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 cups orzo pasta
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup fresh parsley, chopped
Instructions
- Mix ground chicken, breadcrumbs, egg, Parmesan, garlic, oregano, salt, and pepper in a bowl.
- Form mixture into small meatballs, about 1-inch in diameter.
- Brown meatballs in a skillet over medium heat until golden on all sides.
- Cook orzo according to package instructions.
- In the same skillet, add cream and chicken broth, simmer with meatballs.
- Serve meatballs and creamy sauce over orzo, garnish with parsley.
Notes
- Make sure not to overcrowd the pan when browning meatballs.
- You can make the meatballs ahead and freeze them.
- Store leftovers in an airtight container for up to 3 days.
- For a lighter version, substitute heavy cream with half-and-half.
