Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 2 cups water
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. In a skillet, brown the ground beef along with chopped onion and minced garlic. Drain any excess fat.
  2. In a crockpot, combine the cooked beef mixture with crushed tomatoes, beef broth, water, Italian seasoning, salt, and pepper.
  3. Set the crockpot to cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, add the broken pieces of lasagna noodles to the mixture in the crockpot.
  5. After the noodles become tender, stir in the ricotta, mozzarella, and Parmesan cheeses.
  6. Serve the soup hot, garnishing each bowl with fresh basil leaves.

Notes

For variation, swap ground beef with turkey or chicken, and feel free to add vegetables like spinach or zucchini. Adjust seasoning to taste.
