- 4 cups chicken or vegetable broth

Instructions
- Place the diced potatoes and chopped onion in the crockpot.
- Pour in the chicken or vegetable broth and season with salt and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.
- Once cooked, use a potato masher to mash some of the potatoes for a creamier texture.
- Stir in the heavy cream and shredded cheddar cheese until melted and well combined.
