Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream

  1. Place the diced potatoes and chopped onion in the crockpot.
  2. Pour in the chicken or vegetable broth and season with salt and pepper.
  3. Cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender.

Notes

For a spicier kick, consider adding diced jalapeños or a dash of cayenne pepper. Feel free to mix in other vegetables for added nutrition.
