Ingredients

  • 1 lb chicken breasts
  • 1 can (14 oz) coconut milk
  • 4 cups chicken broth
  • 1 cup sliced mushrooms
  • 1 red bell pepper, sliced
  • 1 cup chopped broccoli
  • 2 tablespoons curry paste
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Pour in the coconut milk and chicken broth.
  3. Add the sliced mushrooms, red bell pepper, and chopped broccoli.
  4. Stir in the curry paste, fish sauce, and lime juice.
  5. Cover the crockpot and set it to cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken and return it to the soup.
  7. Serve hot, garnished with fresh cilantro.

Notes

For added spiciness, adjust the amount of curry paste. Garnish with lime wedges for extra flavor.
