- 1 lb chicken breasts
- 1 can (14 oz) coconut milk
- 4 cups chicken broth
- 1 cup sliced mushrooms
- 1 red bell pepper, sliced
- 1 cup chopped broccoli
- 2 tablespoons curry paste
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Pour in the coconut milk and chicken broth.
- Add the sliced mushrooms, red bell pepper, and chopped broccoli.
- Stir in the curry paste, fish sauce, and lime juice.
- Cover the crockpot and set it to cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken and return it to the soup.
- Serve hot, garnished with fresh cilantro.
Notes
For added spiciness, adjust the amount of curry paste. Garnish with lime wedges for extra flavor.
