- 2 cups crushed Ritz crackers
- 1/2 cup grated Parmesan cheese
- 2 eggs, beaten
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- In a shallow bowl, combine crushed Ritz crackers, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
- Dip each chicken breast in beaten eggs, then coat thoroughly in the Ritz cracker mixture.
- Place coated chicken in the prepared baking dish, making sure not to overcrowd.
- Bake for 20 minutes, then remove from oven.
- Pour marinara sauce over each chicken breast and top with shredded mozzarella cheese.
- Return to oven and bake for an additional 5-10 minutes until chicken reaches 165°F (74°C) and cheese is bubbly and golden.
- Optional: Broil for 1-2 minutes at the end for extra crispiness.
- Let rest for 5 minutes before serving.
