Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 4 sheets nori (seaweed)
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1 cup imitation crab meat, shredded
  • 1/2 cup panko breadcrumbs
  • Soy sauce for serving
  • Wasabi (optional)
  • Pickled ginger (optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer’s instructions.
  2. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, combine with the vinegar mixture and let it cool.
  3. Place a bamboo sushi mat on a flat surface and lay a sheet of nori on top.
  4. Wet your hands and spread an even layer of sushi rice over the nori, leaving a small border at the top.
  5. Layer avocado, cucumber, and imitation crab across the rice.
  6. Roll the sushi tightly from the bottom using the mat, applying gentle pressure.
  7. Cut the roll into bite-sized pieces and roll in panko breadcrumbs for extra crunch.
  8. Serve with soy sauce, wasabi, and pickled ginger.

Notes

Experiment with different fillings and remember to wet your hands and knife to prevent sticking while cutting.
