Ingredients

- 1 bag tater tots
- 1 can dairy-free cream of mushroom soup
- 1 cup dairy-free cheese shreds
- 1 cup vegetable broth
- 1 cup mixed vegetables (peas, corn, carrots, etc.)
- 1 onion, diced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 400°F (200°C).
- Heat olive oil over medium heat in a skillet. Sauté the diced onion until translucent.
- Mix in the mixed vegetables and cook for an additional 3–5 minutes.
- Combine the sautéed mixture with the dairy-free cream of mushroom soup and vegetable broth in a baking dish. Season with salt and pepper.
- Top with an even layer of tater tots.
- Sprinkle dairy-free cheese shreds over the tater tots.
- Bake for 25–30 minutes, until golden brown and crispy.
- Let cool for a few minutes before serving.
Notes
For extra crunch, consider adding crushed gluten-free crackers on top before baking.
