Description

A comforting and hearty casserole made with crispy tater tots, creamy dairy-free mushroom soup, and a delightful mix of vegetables.


Ingredients

  • 1 bag tater tots
  • 1 can dairy-free cream of mushroom soup
  • 1 cup dairy-free cheese shreds
  • 1 cup vegetable broth
  • 1 cup mixed vegetables (peas, corn, carrots, etc.)
  • 1 onion, diced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil over medium heat in a skillet. Sauté the diced onion until translucent.
  3. Mix in the mixed vegetables and cook for an additional 3–5 minutes.
  4. Combine the sautéed mixture with the dairy-free cream of mushroom soup and vegetable broth in a baking dish. Season with salt and pepper.
  5. Top with an even layer of tater tots.
  6. Sprinkle dairy-free cheese shreds over the tater tots.
  7. Bake for 25–30 minutes, until golden brown and crispy.
  8. Let cool for a few minutes before serving.

Notes

For extra crunch, consider adding crushed gluten-free crackers on top before baking.
