Description
Classic Danish wedding cookies, also known as snowball cookies, are buttery, nutty shortbread cookies coated in powdered sugar.
Ingredients

- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus more for coating
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup finely chopped nuts (optional)
Instructions
- Preheat oven to 350°F (175°C)
- Cream butter and powdered sugar until light and fluffy
- Mix in vanilla extract
- Gradually add flour and salt, mixing until combined
- Fold in chopped nuts if using
- Shape dough into 1-inch balls
- Bake for 12-15 minutes until edges are slightly golden
- Cool slightly and roll in additional powdered sugar
Notes
- Cookies can be made nut-free by omitting nuts or replacing with white chocolate chips
- Measure flour correctly by spooning into measuring cups
- Allow oven to fully preheat before baking
- Can be made up to a week in advance if stored properly
- Cookies improve after 24 hours as flavors meld
