Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan and set aside.
- In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, combine the melted butter, granulated sugar, and brown sugar. Mix well.
- Add the eggs and vanilla extract to the wet mixture and whisk until smooth.
- Stir the shredded zucchini into the wet ingredients until evenly distributed.
- Add the creamy peanut butter to the wet mixture and mix until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes.
- Remove from the pan and transfer to a wire rack to cool completely.
- Slice and serve the chocolate chip peanut butter zucchini bread once cooled.
Notes
- Remember to squeeze out excess moisture from shredded zucchini to avoid a soggy bread texture.
- Opt for creamy almond butter for a delicious nutty flavor that complements the chocolate and zucchini.
- Gently fold in chocolate chips into the batter to prevent overmixing and maintain a tender bread texture.
