  • 2 large eggs
  • 2 teaspoons (10 ml) vanilla extract (10 milliliters)
  • 2 cups (480 ml) grated zucchini (about 300 grams)
  • 1 cup (240 ml) semi-sweet chocolate chips (175 grams)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease two 8×4 inch loaf pans and set aside.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and cocoa powder.
  4. In another bowl, mix the melted butter, vegetable oil, granulated sugar, and brown sugar until smooth.
  5. Add the eggs and vanilla extract to the wet ingredients and mix until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
  7. Fold in the grated zucchini until evenly distributed in the batter.
  8. Gently fold in the chocolate chips.
  9. Divide the batter evenly between the prepared loaf pans.
  10. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
