- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 4 cups fresh spinach
- 15 ounces ricotta cheese
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1 egg
- 1 teaspoon dried basil
- Salt and pepper to taste
- 4 cups marinara sauce
Instructions
- Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until softened.
- Add mushrooms to the skillet and cook until browned. Stir in the spinach and cook until wilted.
- In a mixing bowl, combine ricotta cheese, Parmesan cheese, egg, basil, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish. Layer 3 lasagna noodles, followed by half of the ricotta mixture, half of the spinach and mushroom mixture, and a third of the mozzarella cheese. Repeat layers, finishing with a final layer of noodles and marinara sauce. Top with remaining mozzarella cheese.
- Cover the baking dish with foil and bake for 30 minutes. Then remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
- Let cool for a few minutes before slicing and serving.
Notes
Let your lasagna rest after baking to allow the layers to set for easier serving. Experiment with different cheeses for unique flavors.
