This decadent creamy spinach and mushroom lasagna embodies comfort and flavor, featuring earthy mushrooms and vibrant spinach wrapped in rich, cheesy goodness.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 15 ounces ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 1 egg
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 4 cups marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C). Cook the lasagna noodles according to package instructions and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sautéing until softened.
  3. Add mushrooms to the skillet and cook until browned. Stir in the spinach and cook until wilted.
  4. In a mixing bowl, combine ricotta cheese, Parmesan cheese, egg, basil, salt, and pepper.
  5. Spread a layer of marinara sauce on the bottom of a baking dish. Layer 3 lasagna noodles, followed by half of the ricotta mixture, half of the spinach and mushroom mixture, and a third of the mozzarella cheese. Repeat layers, finishing with a final layer of noodles and marinara sauce. Top with remaining mozzarella cheese.
  6. Cover the baking dish with foil and bake for 30 minutes. Then remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
  7. Let cool for a few minutes before slicing and serving.

Notes

Let your lasagna rest after baking to allow the layers to set for easier serving. Experiment with different cheeses for unique flavors.
