Ingredients

- 12 oz (340 g) pasta
- 1 lb (450 g) steak
- Salt and pepper to taste
- 1 tbsp oil
- 1 minced shallot
- 3 minced garlic cloves
- 2 tbsp butter
- 1/2 cup (120 ml) beef broth
- 1 cup (240 ml) heavy cream
- 1/2 cup (50 g) grated Parmesan cheese
Instructions
- Boil the pasta in well-salted water until al dente, about 8-10 minutes.
- While the pasta cooks, season the steak with salt and pepper. Heat oil in a hot cast-iron skillet, and sear the steak for 3-4 minutes on each side.
- Allow the steak to rest for 5-10 minutes before slicing thinly against the grain.
- In the same skillet, add butter, shallot, and garlic, sautéing until fragrant.
- Deglaze the pan with beef broth, scraping up any flavorful bits.
- Stir in heavy cream and Parmesan, then gently simmer until the sauce thickens.
- Toss the cooked pasta with the sauce and sliced steak, adding reserved pasta water as needed for consistency.
Notes
Serve garnished with additional Parmesan and fresh herbs for extra flavor.
