Ingredients

  • 1 1/2 cups old-fashioned oats
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 cup unsalted butter, cold and cubed
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 3 cups apples, peeled and chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat the oven to 350°F and line a 9×13-inch pan with parchment paper.
  2. In a large bowl, mix flour, oats, granulated sugar, brown sugar, salt, and cinnamon.
  3. Cut in the cold, cubed butter until the mixture becomes crumbly.
  4. Reserve 1 ½ cups of the mixture for the topping, then press the remaining crumbs into the lined pan. Bake for 10-12 minutes until set but not browned.
  5. In another bowl, toss the apples with lemon juice, cornstarch, vanilla extract, and additional cinnamon and nutmeg if desired.
  6. Spread the apple mixture evenly over the baked crust.
  7. Sprinkle the reserved topping over the apple layer.
  8. Bake for 30-35 minutes until the bars turn golden brown and bubbly.
  9. Cool completely in the pan before slicing into squares.
  10. For the glaze, whisk together powdered sugar and milk, then drizzle over the cooled bars before serving.
