  • 1/4 cup (60 ml) brown sugar, lightly packed
  • 1 1/2 cups (360 ml) grated zucchini, drained
  • 1/2 cup semi-sweet chocolate chips (90 g)

Instructions

  1. Warm up your oven to 350°F.
  2. Prepare a muffin tray by lining it with paper cups or giving it a light coat of non-stick spray, then set it aside.
  3. In a big mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt, whisking until they are thoroughly blended.
  4. In a separate bowl, mix the oil, milk, eggs, vanilla extract, granulated sugar, and brown sugar until the mixture is smooth and uniform.
  5. Incorporate the shredded zucchini into the wet ingredients.
  6. Combine this wet mixture with the dry ingredients, stirring gently until just mixed.
  7. Gently fold in the chocolate chips.
  8. Spoon the batter into the prepared muffin cups, filling each until they are about 3/4 full, and bake for 20-22 minutes, or until a toothpick inserted in the middle of a muffin comes out clean.
  9. Let the muffins cool in the tray for 5 minutes, then transfer them to a wire rack to cool down completely.
  10. Store the muffins at room temperature in a sealed container for up to 3-5 days, or freeze them for a maximum of three months.
