  • – 1 teaspoon (5 ml) salt
  • – 1 teaspoon (5 ml) baking soda
  • – 1 teaspoon (5 ml) ground cinnamon
  • – 2 cups (300 g) finely grated zucchini slightly drained
  • – 1 cup (175 g) semisweet chocolate chips
  • – 1/2 cup (90 g) mini dark chocolate chips (optional)

Instructions

  1. Heat your oven to 350°F and prepare a muffin tin by either greasing it with nonstick spray or placing paper liners in each cup.
  2. In a large mixing bowl, use an electric mixer to blend the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until they are well-mixed.
  3. In another bowl, combine the flour, cocoa powder, salt, baking soda, and cinnamon by whisking them together.
  4. Slowly incorporate the dry mix into the wet mixture, stirring until just blended.
  5. Gently fold in the grated zucchini so it is evenly mixed throughout the batter, then add the semisweet chocolate chips and mix in.
