- 4 cups potatoes, peeled and cubed
- 1 onion, diced
- 1 cup milk
- 4 tablespoons butter
- 1 cup cheddar cheese, shredded

Instructions
- Preheat your oven to 375°F (190°C).
- Boil the potatoes in salted water until tender; drain.
- In a pan, melt 2 tablespoons of butter and sauté the diced onion until soft.
- Mash the potatoes with milk, remaining butter, cheese, salt, and pepper.
- Stir in the sautéed onions until well combined.
- Pour the potato mixture into the pie crust, smoothing the top.
- Bake in the preheated oven for 25-30 minutes, or until the crust is golden and the filling is heated through.
- Let it cool slightly and garnish with chives or parsley before serving.
Notes
For a richer filling, consider using cream instead of milk. Let the pie cool before slicing to prevent a messy serving.
