Description

A heartwarming Irish potato pie featuring a creamy filling of potatoes, cheese, and onions, encased in a flaky crust.

Ingredients

Scale
  • 4 cups potatoes, peeled and cubed
  • 1 onion, diced
  • 1 cup milk
  • 4 tablespoons butter
  • 1 cup cheddar cheese, shredded
  • Salt and pepper to taste
  • 1 pie crust (store-bought or homemade)
  • Optional: chives or parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the potatoes in salted water until tender; drain.
  3. In a pan, melt 2 tablespoons of butter and sauté the diced onion until soft.
  4. Mash the potatoes with milk, remaining butter, cheese, salt, and pepper.
  5. Stir in the sautéed onions until well combined.
  6. Pour the potato mixture into the pie crust, smoothing the top.
  7. Bake in the preheated oven for 25-30 minutes, or until the crust is golden and the filling is heated through.
  8. Let it cool slightly and garnish with chives or parsley before serving.

Notes

For a richer filling, consider using cream instead of milk. Let the pie cool before slicing to prevent a messy serving.
