Ingredients

  • 2 tablespoons Unsalted Butter
  • 4 ounces Cream Cheese
  • 1/4 cup Heavy Whipping Cream (or coconut cream)
  • 1 cup Shredded Cheddar Cheese (sharp)
  • 1 pound Ground Beef (or ground chicken/turkey)
  • 2 tablespoons Taco Seasoning (homemade preferred)
  • 4 pieces Low-Carb Tortillas (like Mission Carb Balance)
  • 1 cup Sour Cream (or Greek yogurt)
  • 1 cup Lettuce (shredded)
  • 1 medium Tomato (or bell peppers)
  • 1 cup Extra Cheddar Cheese (pepper jack optional)
  • 1/4 cup Cilantro (or parsley)
  • 1/2 cup Jalapeño Slices (optional)
  • 1 tablespoon Olive Oil

Instructions

  1. Melt the butter in a saucepan over medium heat. Add the cream cheese and stir until melted.
  2. Pour in the heavy cream, mixing well, and then add the shredded cheddar cheese. Stir until completely smooth.
  3. Heat olive oil in a skillet over medium heat. Add the ground beef and cook until browned.
  4. Sprinkle the taco seasoning over the beef, mixing it for even flavor distribution. Allow to simmer for a couple of minutes.
  5. Warm the low-carb tortillas for about 20 seconds on each side in a separate pan.
  6. Place a portion of the beef mixture on each tortilla. Drizzle cheese sauce over the top, followed by sour cream, lettuce, tomato, and cilantro.
  7. Fold the edges of the tortilla toward the center to create a wrap.
  8. Cook each crunchwrap seam-side down in the skillet on medium heat for about 3-4 minutes on each side until golden brown.
  9. Slice the crunchwrap in half or serve whole, garnished with extra cheese and toppings.

Notes

Customize your fillings and experiment with spices for added flavor. Make sure to warm tortillas properly to prevent cracking.
