Ingredients
Scale
- 1 pound strip steak, sliced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 clove garlic, minced
- 1 tablespoon lime juice
- 1/2 teaspoon cumin
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 cup cooked cilantro lime rice (or Mexican rice)
- 1/2 cup guacamole
- 1/2 cup pico de gallo
- 1/2 cup shredded cheddar cheese
- 4 flour tortillas (8-inch)
- Fresh jalapeños or bell peppers, sliced
- Fresh cilantro or green onions, chopped
- Chipotle mayo or lime crema
- Nonstick cooking spray
Instructions
- Mix together salt, pepper, garlic, lime juice, cumin, and soy sauce in a bowl to create the marinade.
- Toss sliced steak into the marinade, allowing it to marinate for at least 30 minutes or up to 1 hour.
- Pat marinated steak dry with paper towels. Heat a skillet over medium-high heat and cook the steak for about 5 minutes until desired doneness.
- Warm tortillas in the skillet for about 30 seconds until pliable.
- Assemble burritos by layering cilantro lime rice, cooked steak, guacamole, pico de gallo, and cheddar cheese on each tortilla. Add jalapeños or bell peppers, and drizzle with chipotle mayo.
- Roll up each burrito carefully, ensuring not to overfill.
- Spray each burrito lightly with nonstick spray; cook seam-side down in a hot skillet until golden brown, about 1 minute per side.
Notes
For added flavor, grill the sliced bell peppers or jalapeños for a smoky taste. Customize with different toppings for variety.
