Description

Savor the flavors of marinated strip steak wrapped in warm tortillas, filled with fresh toppings for a delightful handheld meal.

Ingredients

Scale
  • 1 pound strip steak, sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • 1/2 teaspoon cumin
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 cup cooked cilantro lime rice (or Mexican rice)
  • 1/2 cup guacamole
  • 1/2 cup pico de gallo
  • 1/2 cup shredded cheddar cheese
  • 4 flour tortillas (8-inch)
  • Fresh jalapeños or bell peppers, sliced
  • Fresh cilantro or green onions, chopped
  • Chipotle mayo or lime crema
  • Nonstick cooking spray

Instructions

  1. Mix together salt, pepper, garlic, lime juice, cumin, and soy sauce in a bowl to create the marinade.
  2. Toss sliced steak into the marinade, allowing it to marinate for at least 30 minutes or up to 1 hour.
  3. Pat marinated steak dry with paper towels. Heat a skillet over medium-high heat and cook the steak for about 5 minutes until desired doneness.
  4. Warm tortillas in the skillet for about 30 seconds until pliable.
  5. Assemble burritos by layering cilantro lime rice, cooked steak, guacamole, pico de gallo, and cheddar cheese on each tortilla. Add jalapeños or bell peppers, and drizzle with chipotle mayo.
  6. Roll up each burrito carefully, ensuring not to overfill.
  7. Spray each burrito lightly with nonstick spray; cook seam-side down in a hot skillet until golden brown, about 1 minute per side.

Notes

For added flavor, grill the sliced bell peppers or jalapeños for a smoky taste. Customize with different toppings for variety.
