Ingredients
Scale
- 1 1/2 cups (360 ml) white sugar
- 1/2 cup (120 ml) vegetable oil
- 2 teaspoons (10 ml) vanilla extract
- 2 cups (240 g) all-purpose flour
- 1/2 cup (60 g) unsweetened cocoa powder
- 1 1/2 teaspoons (8 ml) baking soda
- 1 teaspoon (5 ml) salt
- 2 cups (300 g) shredded zucchini
- 1/2 cup (60 g) chopped walnuts
- 6 tablespoons (90 ml) unsweetened cocoa powder
- 1/4 cup (60 ml) vegetable oil
- 2 cups (240 g) confectioners’ sugar
- 1/4 cup (60 ml) milk
- 1/2 teaspoon (3 ml) vanilla extract
Instructions
- Gather all the necessary items. Set your oven to 350°F (175°C) and let it heat up. Coat a 9×13-inch baking dish with grease and a dusting of flour.
- In a large mixing bowl, combine the sugar, oil, and 2 teaspoons of vanilla until the mixture is uniform. In another bowl, mix together the flour, 1/2 cup of cocoa, baking soda, and salt, then incorporate this into the sugar blend.
- Gently fold in the shredded zucchini and chopped walnuts, then evenly distribute the batter in the prepared baking dish.
- Place the dish in the preheated oven and bake until the surface appears dry and the edges begin to separate from the pan, approximately 25 to 30 minutes. Allow it to cool for about 20 minutes.
- While cooling, prepare the frosting: In a pan over medium-low heat, whisk together 6 tablespoons of cocoa and butter until the mixture is smooth and shiny, then let it cool.
- Mix the confectioners’ sugar, milk, and 1/2 teaspoon of vanilla, then combine this with the cooled chocolate mixture. Spread the frosting over the cooled brownies before slicing them into squares.
- Enjoy your treat!
Notes
- Make sure to remove excess moisture from shredded zucchini before adding it to the batter for a better texture.
- For a more intense flavor, swap regular cocoa with dark cocoa powder in the frosting.
- For a thicker frosting, adjust consistency by adding more confectioners’ sugar until desired thickness.
