- 1/2 cup (120 ml) (85 grams) raisins or dried fruit (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Line a muffin tin with paper liners or lightly grease it.
- In a large bowl, combine all-purpose flour and whole wheat flour.
- Add baking powder, baking soda, salt, cinnamon, and nutmeg to the flour mixture.
- Whisk the dry ingredients together until well combined.
- In another bowl, beat the eggs until lightly frothy.
- Add vegetable oil, honey, brown sugar, and vanilla extract to the eggs.
- Mix the wet ingredients until smooth and well combined.
- Gently fold the grated zucchini into the wet mixture.
- Add the wet mixture to the dry ingredients.
- Stir until just combined, being careful not to overmix.
- If using, fold in the walnuts or pecans and raisins or chocolate chips.
- Divide the batter evenly among the prepared muffin cups.
- Fill each muffin cup about three-quarters full.
- Bake in the preheated oven for 18 to 22 minutes.
- Check for doneness by inserting a toothpick into the center of a muffin; it should come out clean.
- Remove the muffins from the oven and let them cool in the pan for 5 minutes.
- Transfer muffins to a wire rack to cool completely before serving.
