  • 1/2 cup (120 ml) (120 milliliters) honey
  • 1/4 cup (60 ml) (50 grams) brown sugar
  • 1 teaspoon (5 ml) vanilla extract
  • 1 1/2 cups (360 ml) (about 180 grams) grated zucchini
  • 1/2 cup (120 ml) (50 grams) chopped walnuts or pecans (optional)
  • 1/2 cup (120 ml) (85 grams) raisins or dried fruit (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with paper liners or lightly grease it.
  3. In a large bowl, combine all-purpose flour and whole wheat flour.
  4. Add baking powder, baking soda, salt, cinnamon, and nutmeg to the flour mixture.
  5. Whisk the dry ingredients together until well combined.
  6. In another bowl, beat the eggs until lightly frothy.
  7. Add vegetable oil, honey, brown sugar, and vanilla extract to the eggs.
  8. Mix the wet ingredients until smooth and well combined.
  9. Gently fold the grated zucchini into the wet mixture.
  10. Add the wet mixture to the dry ingredients.
  11. Stir until just combined, being careful not to overmix.
  12. If using, fold in the walnuts or pecans and raisins or chocolate chips.
  13. Divide the batter evenly among the prepared muffin cups.
  14. Fill each muffin cup about three-quarters full.
  15. Bake in the preheated oven for 18 to 22 minutes.
  16. Check for doneness by inserting a toothpick into the center of a muffin; it should come out clean.
  17. Remove the muffins from the oven and let them cool in the pan for 5 minutes.
  18. Transfer muffins to a wire rack to cool completely before serving.
