- 8 ounces elbow macaroni
- 6 hard-boiled eggs, chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon vinegar
- 1/4 cup chopped green onions
- 1/4 cup sweet pickle relish
- Salt and pepper to taste
- Paprika for garnish
Instructions
- Cook the elbow macaroni according to package instructions, then drain and rinse under cold water.
- In a large bowl, combine chopped hard-boiled eggs, mayonnaise, Dijon mustard, vinegar, green onions, and sweet pickle relish.
- Add the cooked macaroni to the egg mixture and stir until well combined.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 1 hour before serving.
- Garnish with paprika before serving.
Notes
For deeper flavor, let the salad chill longer than 1 hour. Consider adding diced celery or bell peppers for additional crunch.
