Ingredients

  • 6 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon vinegar
  • 1/4 cup chopped green onions
  • 1/4 cup sweet pickle relish
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. Cook the elbow macaroni according to package instructions, then drain and rinse under cold water.
  2. In a large bowl, combine chopped hard-boiled eggs, mayonnaise, Dijon mustard, vinegar, green onions, and sweet pickle relish.
  3. Add the cooked macaroni to the egg mixture and stir until well combined.
  4. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 1 hour before serving.
  6. Garnish with paprika before serving.
