- 1 cup (240 ml) granulated sugar
- ½ cup (120 ml) milk
- ½ cup (120 ml) vegetable oil
- 2 teaspoons (10 ml) vanilla extract
- 1 ½ cups (360 ml) grated zucchini, squeezed and liquid drained
- 1 ½ cups (360 ml) chocolate chips
Instructions
- Heat your oven to 375°F and prepare a muffin pan by placing liners in each cup.
- In a small bowl, combine the all-purpose flour, unsweetened cocoa powder, baking powder, baking soda, and salt, mixing them thoroughly.
- In a separate, larger bowl, beat the eggs with the granulated sugar until well mixed. Add the milk and vegetable oil, stirring until smooth. Blend in the vanilla extract.
- Gradually fold the dry mixture into the wet ingredients, mixing until just incorporated. Add the grated zucchini and mix in gently. Finally, fold in the chocolate chips.
- Spoon the batter into the lined muffin cups, filling each about three-quarters full. Place in the oven and bake for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool before enjoying them.
