  • 2 large eggs
  • 1 cup (240 ml) granulated sugar
  • ½ cup (120 ml) milk
  • ½ cup (120 ml) vegetable oil
  • 2 teaspoons (10 ml) vanilla extract
  • 1 ½ cups (360 ml) grated zucchini, squeezed and liquid drained
  • 1 ½ cups (360 ml) chocolate chips

Instructions

  1. Heat your oven to 375°F and prepare a muffin pan by placing liners in each cup.
  2. In a small bowl, combine the all-purpose flour, unsweetened cocoa powder, baking powder, baking soda, and salt, mixing them thoroughly.
  3. In a separate, larger bowl, beat the eggs with the granulated sugar until well mixed. Add the milk and vegetable oil, stirring until smooth. Blend in the vanilla extract.
  4. Gradually fold the dry mixture into the wet ingredients, mixing until just incorporated. Add the grated zucchini and mix in gently. Finally, fold in the chocolate chips.
  5. Spoon the batter into the lined muffin cups, filling each about three-quarters full. Place in the oven and bake for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
