Instructions
- Set your oven to 350°F and prepare a muffin tray by either coating it with a nonstick spray or placing paper liners in each well.
- In a large mixing bowl, use an electric mixer to blend the sugars, oil, eggs, and vanilla extract until they are fully mixed together.
- In another bowl, combine the flour, cocoa powder, salt, baking soda, and cinnamon by whisking them.
- Slowly incorporate the dry mixture into the wet mixture and blend until just mixed.
- Gently mix in the zucchini until it is well incorporated throughout the batter, then add the semisweet chocolate chips.
