  • 2 cups (480 ml) finely grated zucchini, slightly drained
  • 1 cup (240 ml) semisweet chocolate chips
  • ½ cup mini dairy-free chocolate chips, optional

Instructions

  1. Set your oven to 350°F and prepare a muffin tray by either coating it with a nonstick spray or placing paper liners in each well.
  2. In a large mixing bowl, use an electric mixer to blend the sugars, oil, eggs, and vanilla extract until they are fully mixed together.
