  • – 1/2 teaspoon (3 ml) vanilla
  • – 1 1/4 cups (150 g) all-purpose flour
  • – 1/3 cup (30 g) unsweetened Dutch process cocoa powder
  • – 1/2 teaspoon (3 ml) salt
  • – 1/2 teaspoon (3 ml) baking soda
  • – 1/4 teaspoon (1 ml) baking powder
  • – 1 cup (175 g) dairy-free chocolate chips

Instructions

  1. Start by setting your oven to 350°F and positioning a rack in the middle. Prepare a loaf pan measuring 8.5 x 4.5 x 2.75 inches by applying baking spray and lining it with parchment paper.
  2. If your zucchini is particularly wet, gently pat it with paper towels to remove some moisture, but don’t dry it out completely.
  3. In a medium-sized bowl, combine zucchini, both types of sugar, eggs, oil, and vanilla.
  4. In a separate, larger bowl, whisk together the flour, cocoa powder, salt, baking soda, and baking powder.
  5. Gradually incorporate the zucchini mixture into the dry ingredients until just blended. Fold in the majority of the chocolate chips, keeping a couple of tablespoons back to sprinkle on top later.
  6. Transfer the batter into the loaf pan you’ve prepared. Scatter the remaining chocolate chips over the surface.
  7. Bake for 45 to 50 minutes, or until a toothpick inserted into the middle comes out clean. Allow the bread to cool in the pan for about five minutes before moving it to a wire rack.
