- – 1/2 teaspoon (3 ml) baking soda
- – 1/4 teaspoon (1 ml) baking powder
- – 1 cup (175 g) dairy-free chocolate chips
Instructions
- Start by setting your oven to 350°F and positioning a rack in the middle. Prepare a loaf pan measuring 8.5 x 4.5 x 2.75 inches by applying baking spray and lining it with parchment paper.
- If your zucchini is particularly wet, gently pat it with paper towels to remove some moisture, but don’t dry it out completely.
- In a medium-sized bowl, combine zucchini, both types of sugar, eggs, oil, and vanilla.
- In a separate, larger bowl, whisk together the flour, cocoa powder, salt, baking soda, and baking powder.
- Gradually incorporate the zucchini mixture into the dry ingredients until just blended. Fold in the majority of the chocolate chips, keeping a couple of tablespoons back to sprinkle on top later.
- Transfer the batter into the loaf pan you’ve prepared. Scatter the remaining chocolate chips over the surface.
- Bake for 45 to 50 minutes, or until a toothpick inserted into the middle comes out clean. Allow the bread to cool in the pan for about five minutes before moving it to a wire rack.
- Slice using a serrated knife, and enjoy either warm or at room temperature.
