Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the sweet potatoes thoroughly.
- Pat them dry and prick each potato several times with a fork.
- Rub the potatoes with olive oil and sprinkle with salt and pepper.
- Place the sweet potatoes directly on the oven rack or on a baking sheet.
- Bake for 45-60 minutes, or until tender.
- Remove from the oven, allow to cool slightly, and serve.
Notes
For a crispy texture, turn on the broiler for the last few minutes of baking. Consider letting the sweet potatoes rest in warm water for an hour before baking to speed up cook time.
