- 2/3 cup (135g) granulated sugar
- 2 large eggs, room temperature
- 3 medium/large bananas, very ripe, about 1 3/4 cups (420 ml) mashed
- 1/2 tsp (3 ml) vanilla extract
- 1 1/2 cups (180g) all-purpose flour
- 1 tsp (5 ml) baking soda
- 1/2 tsp (3 ml) salt
- 1 cup (175g) chocolate chips, divided, or mini chocolate chips or chunks
Instructions
- Heat your oven to 350°F. Grease and dust a loaf pan with flour to prevent sticking.
- In a mixing bowl, use the paddle attachment to blend the softened butter with the sugar until creamy. Introduce the two eggs, which have been lightly whisked.
- Using a fork, mash the ripe bananas until they’re chunky, similar to applesauce, and incorporate them into the mixture along with the vanilla extract. Stir until well combined.
- In another bowl, combine the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until everything is well integrated.
- Gently mix in 3/4 cup of chocolate chips, then pour the batter into the prepared loaf pan. Scatter the remaining 1/4 cup of chocolate chips on top and bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean. Allow the banana bread to sit for 10 minutes before moving it to a wire rack to cool completely.
