Ingredients

  • 5 tbsp unsalted butter
  • ½ onion, chopped
  • ⅓ cup all-purpose flour
  • 2 cups chicken stock
  • 1 celery stalk, finely diced
  • 2½ cups broccoli, chopped into bite-sized pieces
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • 1 cup additional shredded cheddar cheese for topping

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the chopped onion and sweat until translucent, about 5 minutes.
  3. Whisk in the flour and cook for 2 minutes to make a roux.
  4. Stir in the chicken stock, seasoning generously with salt and pepper.
  5. Add the diced celery and chopped broccoli, bring to a boil, then reduce heat to medium-low and simmer for about 15 minutes until vegetables are tender.
  6. Stir in the whole milk and simmer until thickened, about 2-3 minutes.
  7. Remove from heat and gradually stir in the shredded cheddar cheese until melted and smooth.
  8. Adjust seasoning, top with additional cheddar, and serve warm.

Notes

Blend for a smoother texture or experiment with different cheeses for variety. Store leftovers in the refrigerator for up to three days.
