- 5 tbsp unsalted butter
- ½ onion, chopped
- ⅓ cup all-purpose flour
- 2 cups chicken stock
- 1 celery stalk, finely diced
- 2½ cups broccoli, chopped into bite-sized pieces
- 2 cups whole milk
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- 1 cup additional shredded cheddar cheese for topping
Instructions
- Melt the butter in a large pot over medium heat.
- Add the chopped onion and sweat until translucent, about 5 minutes.
- Whisk in the flour and cook for 2 minutes to make a roux.
- Stir in the chicken stock, seasoning generously with salt and pepper.
- Add the diced celery and chopped broccoli, bring to a boil, then reduce heat to medium-low and simmer for about 15 minutes until vegetables are tender.
- Stir in the whole milk and simmer until thickened, about 2-3 minutes.
- Remove from heat and gradually stir in the shredded cheddar cheese until melted and smooth.
- Adjust seasoning, top with additional cheddar, and serve warm.
Notes
Blend for a smoother texture or experiment with different cheeses for variety. Store leftovers in the refrigerator for up to three days.
